Sojji Appam | Sooji appam | Sujji appam | Semolina appam | Rava appam |

Sojji Appam or Rava appam is a sweet dish. It is made with maida and semolina or rava. The sweetness is from sugar or jaggery. Also it is a deep fried snack.
I dint know that it is so easy to prepare. My mom used to make this frequently as it was my dad’s favorite.

Ingredients:

  • Cover for filling:
  • 2 cups Maida
  • 1tsp semolina/Rava
  • pinch of salt
  • 2 tbsp oil
  • Filling:
  • 1/2 cup ghee
  • 10 cashew nuts(optional)
  • 1 cup semolina/rava
  • 1 cup water
  • 1 cup sugar or jaggery.
  • Pinch of cardamom powder
  • Pinch of saffron(optional)
  • Oil for deep frying

Method:

Cover for Filling:

  1. Mix maida, semolina/rava and salt.
  2. Add oil and mix well.
  3. Now add water little by little to make a soft dough.
  4. Set aside for 2 hrs.

Filling:

  1. Heat 1/2 cup of ghee and add the semolina.
  2. Roast them 3-4 mins. Do not brown them.
  3. Add 1 cup of water and cook the semolina in low heat and keep stirring.
  4. Once semolina is half cooked add 1 cup of sugar/Jaggery and stir until they thicken.
  5. If needed add 1 tsp ghee.
  6. Mix the powdered cardamom and saffron. I
  7. f needed roast cashew and add in this stage.
  8. Remove from heat and allow them to cool.

To make appam:

  1. Take the maida dough and divide into small dough balls.
  2. Now roll them to a small circle and place one small portion of the filling in this and pull over the edges and cover.
  3. Now again press the dough with filling into small disc.
  4. Place a kadai with oil for deep frying in medium heat.
  5. Once oil is heat drop the appams one by one and fry both sides golden colour.
  6. Cool and serve.
