Ingredients:
- Rava/ Semolina – 2 cups
- Salt to taste
- Oil – 2 tbsp
- Mustard – 1 tsp
- Urad and chana dal – 1 tbsp each
- Carrot – 1 fully shredded
- Ginger -1 tsp
- Curry leaves few
- Water – 1 cup
- Curd – 1.5 cup
- Corainder leaves – few
- In a pan add oil, mustard, urad and chana dal.
- Fry for a min Add curry leaves and ginger.
- Add cashews. Saute.
- Then add shredded carrot and turmeric. Cook for 2mins.
- Add rava and roast well.
- Transfer to bowl and add coriander leaves & salt.
- Add curd and mix them well.
- Now add 3/4th cup of water and form thick batter.
- Rest for 15mins.
- Now again add 1/4th cup of water and make it idly bater consistency.
- Grease idly plate and pour a ladleful of batter.
- Steam them for 15mins.
- Serve the idly with chutney and sambar.
