Ingredients:
- Mixed veggies of your choice( carrot, beans, potato) – 3 cups.
- Salt to taste
- Cumin seeds – 2 tsp
- Onion – 1 cup
- To grind for masala:
- Coconut – 1/2 cup
- Green chillies -4
- Garlic – 2
- Ginger 1 tsp
- Fennel seeds – 1 tbsp
- Cardamom – few
- Cashews – 6 or 7
- Poppy seeds -1 tbsp
- Add little water and ground to smooth paste.
- In a pan add oil, cumin seeds and onions and saute until soft.
- Now add the veggies and little water.
- Cook on medium flame until the veggies and salt are completely cooked.
- Add the grind masala paste and cook for 3 mins.
- Now add some water to adjust the consistency.
- Cook for 5mins on low flame.Garnish with cilantro.
- Serve with chapathi or parotta.
