Sorakkai Payasam | Bottleguard Payasam | BOTTLE GOURD KHEER | is a creamy and delicious kheer/payasam. I never knew this payasam would be so delicious like semiya payasam.

Ingredients:
- Ghee- 3tbsp
- Cashew and raisins Few
- Bottleguard- 1 fully grated
- Milk- 1/2 litre.
- Cardamom powder- 1 tsp
- Comdemsed milk/Milkmaid- 1 cup Or Sugar- 1 cup
- In a pan add ghee, cashew and raisins. Fry them until golden brown. Set aside.
- Peel the skin and remove the seeds of bottleguard. Grate them finely.
- Squeeze the water from bottlegyuard and set the water aside. In the same pan add some more ghee and the grated bottleguard. Cook then for 10mins on medium flame. Set aside.
- Boil milk in another pan. Once milk is boiled add the cooked bottleguard. Mix them well.
- Allow them to boil for 15mins on medium flame.
- Add cardamom powder. Keep stirring on and off to avoid the milk sticking to the pan.
- Add condensed milk or milkmaid. mix them well.
- Boil for 10mins on medium low flame.
- Add fried cashews and raisins .
- Turn off and serve them hot or cold.
