This is a lentil based gravy with small onions and drumstick. Sambar is one of the main gravy for South Indian. There are lot of other veggies used in sambar like pumpkin, ladies finger, raddish etc. The main ingredient is the Sambar powder.

Ingredients:

  • Pressure cook 1 cup of toor dhall and mash it. Set aside.
  • Small onion – 1 cup
  • Small tomato – 1 cup
  • Tamarind extract – 2 cups
  • Drumstick – 2nos. ( i used frozen. If using normal u can pressure cook with dhall)
  • Sambar powder – 2 tbsp
  • Salt to taste
  • Ghee 1 tsp
  • Coriander leaves – few
  • To temper:
  • Mustard seeds – 2 tsp
  • Curry leaves few
  • Green chillies – 2
  1. In a vessel add oil and add ingredients to temper.
  2. Once done add small onion and saute until soft.
  3. Then add tomatoes and saute till mushy.
  4. Add drumstick and cover cook for 5mins on medium flame.
  5. Once drumstick is half cooked add tamarind extract.
  6. Add sambar powder and salt and allow them to boil until raw tamarind smell goes.
  7. Add pressure cooked dhal and adjust the consistency. Boil them.
  8. Add hing, coriander leaves and a tsp of ghee.
  9. Close the lid and turn off flame.
  10. Serve with hto white steamed rice.
