Easy veg pulao | Vegetable Pulao | Vegetable Pulov | Veg Pulao in pressure cooker |

Pulao is basically combination of different veggies and rice. It can be basically veg or non veg too. It has lot of different spices like nutmeg, cloves, mace, cardamom, bay leaf, cinnamon etc. Usually it is served with raita or any curry. When you are tired to cook Veg pulao comes to rescue. It is one pot cooking. You can use any vegetable of your choice. My mom adds this fried bread pieces at last.

Ingredients:

  • Onion: 1 finely chopped
  • Tomato- 1 chopped
  • Ginger, garlic and green chilli paste – 2tsp
  • Mint leaves- few
  • Chopped veggies of your choice. – 1.5 cup( i used 5 beans, 1 carrot, 1 potato, 1/4 cup peas)
  • Basmati Rice – 1 cup ( wash and soak)
  • Water – 2 cups
  • Dry spices: Mace – 1
  • Shahi jeera – 1 tsp
  • Bay leaf – 1
  • Cinnamon stick – 1 piece
  • Cloves- 4
  • Cardamom – 2
  • whole Coriander leaves
  • Few Bread – 4 slices
  • Ghee
  • Oil
  • Salt as required.
  1. In a pressure cooker add some oil and ghee.
  2. Once heat add the dry spices and saute for a min.
  3. Add onion and saute till soft.
  4. Add ginger garlic and green chilli paste and saute for 2mins
  5. Add mint leaves. Add the chopped tomatoes and saute till mushy.
  6. Once cooked add the veggies.
  7. Add salt and 2 cups of water.
  8. Add soaked basmati rice and mix everything.
  9. Add coriander leaves.
  10. Close the cooker with lid and do not add whistle.
  11. Cook on medium flame for 15mins
  12. Open the cooker and check whether the veggies are cooked.
  13. Then cook for 10 mins in low flame.
  14. In a kadai add some ghee and cut the bread slices in small squares.
  15. Roast them in ghee to golden colour. Do not burn them.
  16. Add them to the pulao and mix gently.
  17. Serve the pulao with raita or any curry.
