Ingredients:
- Tindora/ kovakkai – 500 gms
- Salt to taste
- Red chilli powder
- Turmeric powder- 1/2 tsp
- Mustard seeds – 1 tsp

- Oil – 3tbsp
- In a heavy bottomed pan add some oil and mustard seeds.
- Allow them to splutter.
- Now add the cut tindora/ kovkkai and add salt , red chilli powder and turmeric and mix well.
- Close and cook on medium flame until the veggies is fully cooked. Keep stirring in between.
- Once veggies is cooked fully open and cook till it get roasted.
- Turn off and serve it hot as side dish.
- Note:Do not add water. As you are cooking on medium flame by closing the pan, it will sweat and get cooked in that.
- To make it nice fry, it requires little more oil.
