Kovakkai/Tindora fry is a simple and easy dry curry best for rice.

Ingredients:

  • Tindora/ kovakkai – 500 gms
  • Salt to taste
  • Red chilli powder
  • Turmeric powder- 1/2 tsp
  • Mustard seeds – 1 tsp
  • hing
  • Oil – 3tbsp
  1. In a heavy bottomed pan add some oil and mustard seeds.
  2. Allow them to splutter.
  3. Now add the cut tindora/ kovkkai and add salt , red chilli powder and turmeric and mix well.
  4. Close and cook on medium flame until the veggies is fully cooked. Keep stirring in between.
  5. Once veggies is cooked fully open and cook till it get roasted.
  6. Turn off and serve it hot as side dish.
  • Note:Do not add water. As you are cooking on medium flame by closing the pan, it will sweat and get cooked in that.
  • To make it nice fry, it requires little more oil.
