A yummy mix of veggies cooked in butter and spices. Pav Bhaji is a fast food from Maharashtra. It is one famous Indian street food. Pav is the Indian bread and bhaji is the veggies mashed. It is usually served with generous amount of butter.

Ingredients:

  • Pav Bun- 12 to 14 rolls
  • Steamed mixed veggies – 3 cups(potato, beans, peas, carrot & cauliflower)
  • Chopped tomato – 2
  • Onions chopped -1
  • Turmeric – 1/2 tsp
  • Red chilli powder – 1 tbsp
  • Pav Bhaji masala – 2 tbsp
  • Butter – 3 tbsp
  • Salt to taste
  • Kasuri methi – few
  • Corainder few
  1. Chop all the veggies of your choice and pressure cook it for one whistle.
  2. In a heavy bottomed pan add 1 tbsp of butter and onions and saute until onions are soft.
  3. Add tomatoes and close & cook for 4mins until the tomato and onion turns mushy.
  4. Now add all veggies and 1/4 cup of water and mix well.
  5. Add red chilli powder, turmeric, salt, pav bhaji masala and mix them well.
  6. Now mash all the veggies nicely.
  7. Let them cook for 5mins on low flame. Add kasuri methi and coriander and saute for 5mins.
  8. Add a piece of butter and close for 6mins on low flame.
  9. Turn off the flame and mix well.
  10. In a tawa add 1 tbsp butter and take one pav bun.
  11. Toast good both sides.
  12. Add a piece of butter when you serve the pav bhaji.
  13. Serve them hot.
