Ingredients:

  • Mixed veggies of your choice( carrot, beans, potato) – 3 cups.
  • Salt to taste
  • Cumin seeds – 2 tsp
  • Onion – 1 cup

  • To grind for masala:
  • Coconut – 1/2 cup
  • Green chillies -4
  • Garlic – 2
  • Ginger 1 tsp
  • Fennel seeds – 1 tbsp
  • Cardamom – few
  • Cashews – 6 or 7
  • Poppy seeds -1 tbsp
  • Add little water and ground to smooth paste.
  1. In a pan add oil, cumin seeds and onions and saute until soft.
  2. Now add the veggies and little water.
  3. Cook on medium flame until the veggies and salt are completely cooked.
  4. Add the grind masala paste and cook for 3 mins.
  5. Now add some water to adjust the consistency.
  6. Cook for 5mins on low flame.Garnish with cilantro.
  7. Serve with chapathi or parotta.
