Dates walnut cake is eggless, no maida, no butter and no sugar . It is very common cake and simple recipe too. The chopped walnuts inside the cake gives little crunchy taste and the chopped dates little sweetness. This is a very traditional cake made during christmas. Even though it is said as cake, it is made in bread loaf pan. This can served during breakfast or evening tea time too.

Ingredient:

  • Dates – 2 cups
  • Hot Milk – 1 cup
  • Oil – 3/4th cup
  • Curd – 1/4th cup
  • Whole Wheat flour – 2 cups
  • Baking Powder – 1 tsp
  • Baking soda – 1/4 tsp
  • Milk – 1/2 cup
  • Chopped walnuts – 1/2 cup
  • Dates – 5 nos. chopped.
  1. Soak 2 cups of dates and hot milk for 30mins. Transfer to blender and grind to smooth paste.
  2. In a mixing bowl pour the blend dates paste. Add oil & curd. Blend them well until the mixture is combined.
  3. Add whole wheat flour, baking powder and baking soda. Again blend and mix well.
  4. Add milk 1/2 cup and mix well. Now add chopped walnuts and dates. Mix by cut and fold method.
  5. Transfer the batter to cake tray or greased bread baking pan. Pat twice.
  6. Top off with chopped walnuts. Preheat the oven at 356 F and bake for 45mins.
  7. Check whether it completely cooked by inserting a tooth pick.
  8. Cool down and cut thick slices.
  9. Serve the delicious cake.
