Roadside Kaalan | Mushroom masala street food | ரோர்டுகடை காளான் மசாலா | How to make roadside mushroom |

Roadside kaalan is famous Coimbatore street food. Kaalan is nothing but mushrooms. This recipe is combination of cabbage and mushroom. Even though i was not a big fan of mushroom, now have started getting crazy on mushroom recipes. After deep frying mushroom and cabbage balls, it is cooked in sauce. But we ate half of deep fried mushroom cabbage balls. So lets look the recipe.

Ingredients:

For Deep Frying Mushroom cabbage balls:

  • Chopped Mushroom – 1 cup
  • Chopped Cabbage – 1 cup
  • Maida – 1 cup
  • Corn flour – 2 tbsp
  • Salt as required
  • Red Chilli powder – 1tbsp
  • Garam masala – 1tbsp
  • Oil – 2 tbsp
  • Onion – 1 cup
  • Ginger garlic paste – 1 tbsp
  • Green chilli 3
  • Curry leaves few
  • Tomaotes – 3
  • Corn flour – 1 tbsp
  • Water – 1 cup
  • Turmeric – 1/4 tsp
  • Red chilli powder – 1 tsp
  • Coriander powder – 1 tsp
  • Salt as required.
  • Garam masala – 1/2 tsp
  • Coriander leaves feww
  1. In a bowl add chopped mushroom and cabbage. Wash them well and drain the water. Add maida, corn flour, salt, red chilli powder and garam masala. Sprinkle little water and mix them well. Do not add too much water.
  2. Heat enough oil for deep frying in kadai. Once oil is hot start dropping small balls and fry until crisp. It will usually take time to cook. Once bubbles starts to subside remove and transfer to plate.
  3. In another pan add oil. Once oil is hot add onions. Add green chilli and curry leaves. Cook until onions are soft. Add Ginger garlic paste and cook for a min.
  4. Grind tomatoes into puree and add them. Add turmeric, red chilli powder, garam masala, coriander powder and salt. Mix them well.
  5. Form a corn flour paste : Add corn flour and water and mix without any lumps. Add the paste to gravy and mix well.
  6. Now add the deep fried cabbage mushroom balls and and mix well.
  7. Garnish with corianderleaves and onions.
  8. Serve them hot.
