This is one famous sweet made during pongal festival. Pongal is south Indian harvest festival. So they prepare 2 varieties of Pongal. One is Khara pongal or Ven pongal. Another one is Sakkarai Pongal. Sakkarai pongal is also prepared for Goddess Andal’s birthday ” Koodaravalli”. Chakkarai Pongal is usually smeared with lots of ghee and tastes so delicious. Ingredients:
- Rice – 3/4th cup
- Moong dal – 1/2 cup
- Jaggery- 2 cups
- Water – 4cups + 1/4 cup
- Ghee – 2tbsp + 3 tbsp
- Cashew few
- Raisins Few
- Cardamom Powder – Pinch
- In a Pressure cooker add rice and moong dal. Add 4 cups of water and pressure cook for 4 whistles.
- Once cooked wait for the pressure to release and Open the cooker. Mash the cooked rice and dal nicely.
- In a pan add ghee 2 tbsp and fry cashews and raisins golden brown. Remove and set aside.
- In the same pan add jaggery and water 1/2 cup. Cook until the jaggery dissolves.
- Add the jaggery syrup to mashed rice and dal. Mix them well to avoid forming lumps.
- Add cardamom powder and fried cashews and raisins. Mix well.
- Add ghee 3 tbsp and serve them hot.
- Note:
- If you find the cooked rice and dal too hard to mix add little warm milk or water. You can adjust the consistency according to your taste.
- Also you can reduce ghee if you want to.
