Idiyappam is one famous kerala food especially for their breakfast. I atsted this idiyappam once in Wayanad. That was so delicious when served with vegetable stew. Sometimes idiyappams are also served with coconut milk. Usually my little one likes it with shredded coconut, ghee and sugar. It is a little long process to make it. But worth the hard work.

Ingredients:
- Water- 2 cups
- Oil few drops.
- Salt- 1 tsp
- Idiyappam flour or Rice flour- 2 cups.
- In a large pan add water, oil and salt. Mix them well.
- Once the bubble starts , add the rice or idiyappam flour little by little.
- Keep stirring to avoid forming lumps.
- IT will start to thicken and form a soft dough.
- If incase you feel dough very dry, sprinkle some hot water.
- Close and cook for 5mins on low flame and turn off.
- Insert the idiyappam mould in presser. Grease some oil in the presser.
- Add some dough to the presser and make a spiral cylindrical shape in the idly plate. Before that grease the plate with oil.
- Steam them for 10mins .
- Once done tramsfer to plate and serve them hot.
